6 Easy & Delicious Recipes for Your Upcoming BBQ

Well, we made it to Memorial Day Weekend -- AKA the unofficial start of summer! Although this long weekend might feel a bit different than years past, I encourage you to take a minute to reflect on making it through another winter -- and by far the weirdest spring of our lives. 

My husband and I recently moved to a house in the ‘burbs (I know, I too thought I’d be a city girl for life), and while moving during a pandemic was not ideal, it’s been incredible to have a backyard as the weather turned warmer. In my adult life, I’ve never lived in an apartment with a private outdoor space so I’ve never owned a grill! You bet that it was one of our first purchases. 

If you know me, you know I’m not the best cook. (Do you know that country song, “The Good Stuff”... “Eating burnt suppers our whole first year” was the theme song of our first year of marriage). But I am DETERMINED to become a grill master. So in honor of our impending kick-off-to-summer weekend, here are the top 6 recipes I’ll be firing up. 

 

 

Pineapple-Glazed Grilled Chicken via Delish. Pineapple is my all-time favorite fruit, and these look tangy and delicious. 

 

 

Grilled Clams with Garlic Butter via Food Network. Grilling isn’t just for meat! My weekend won’t be complete unless I make these garlicy, buttery, perfect littleneck clams

 

 

Blowout Rib-Eye with Chile Chimichurri Sauce via NYTimes Cooking. This chimichurri sauce brightens up any BBQ, and can be paired with any steak of your liking. 

 

 

Mexican Street Corn via Food Network. This recipe is courtesy of Tory’s husband, Andy, and it looks SO easy to make and so good. 

 

 

Charred Gem Lettuce via Country Living. Love this take on a traditional side salad

 

 

Pesto Zucchini Orzo via Good Housekeeping. I know this recipe doesn’t require a grill, but you can’t have a BBQ without some sides. I think of orzo as a light summer pasta, and you can’t go wrong with pesto on anything - especially fresh zucchini.
